Don Lopez

El Cubano in brief, is a real representation of the traditional Cuban culinary.

El Cubano in brief, is a real representation of the traditional Cuban culinary. It originates from the spices, flavours and the traditional cooking methods inherited by the Taino natives, which were later combined with influences from Spanish and African cuisines, and what’s more, the inspirations from the neighbouring island in the Caribbean, which makes today’s Cuban tastes one of a kind. The roast pork sandwiches are extremely popular across the Island, that be at a Carnival, a food kiosk, street stall, or from the windows of a private house. The “pan con lechon asado” aka “bocadito” (amongst Cubans) is a tradition that has travelled around the world and still today is one of the renown specialties of the Cuban kitchen.

Giant Springs

A modern take on Filipino specialty spring rolls in a variety of flavours.

A modern take on a Filipino tradition the people from Giant Springs bring you their specialty spring rolls in a variety of flavours like Roast Duck, Slow Roast Pork, Original Chicken Breast, Mild Moroccan Vegan, Classic Vegan, and Tandoori Chicken Breast. All their meats are treated individually and cooked in their own special way, bringing them up to peak flavour before thickly slicing (chicken & pork), or shredding (duck) and rolling them in with the freshly shredded vegetables & noodles. The duck has a glorious, golden, glossy, crunchy skin, while the pork shoulder is roasted for 5 hours with garlic cloves, rosemary sprigs from their garden, and seasoned with salt & cracked pepper. The chicken breast is a ‘clean and lean’ style meat, perfect for the calorie conscious foodie. The Mild Moroccan is made with flavour-infused chickpeas, and last but not least the Classic Vegan spring roll is the base mix for all the other spring rolls & it consists of savoy cabbage, red cabbage, carrot, vermicelli noodles, cracked pepper, sea salt & a pinch of vegetarian stock powder. It’s always nice for the vegan festival goers to have something they can eat too. Beautiful fresh food being turned into crunchy parcels of deliciousness!
